Canine Autoimmune Hemolytic Anemia (AIHA & IMHA) - Could my Dog have AIHA

I have had lots of problems with food allergies with my JRT who is now nearly 4yrs. Just over a year ago he went through a bad time with anemia his counts were low although not quite bad enough for a transfusion.
I took him off of dried food and fed him Nature diet sensitive, within a week his blood readings were normal.
However after 6 months he became intolerant to that food and was itching and scratching, coat falling out and runny eyes. So we tried an ultra allergenic prescription diet which is dried.
He thrived on it for 2 months then he seemed to get quieter and lost his stamina, I checked his gums and they were very white/grey. and he had as before this funny smell on his breath. So as an emergency over christmas I have put him back on naturediet and his gums now have more colour although are paler first thing in the morning and last thing at night.
I mentioned autoimmune disease to my vet before and he said no. What do you think could he have AIHA?.
All his problems started after his puppy jabs regarding food intolerances, he has never needed another vaccination since as his titre readings have been exceptionally high each year.
How can he be tested for it and what is the prognosis if he does have it?

For a dog to have a diagnosis of AIHA/IMHA, one or more of these three hallmarks need to be present:

"Diagnostic Laboratory Test Results

A diagnosis of IMHA must demonstrate accelerated immune destruction of erythrocytes. Thus, beside documenting a hemolytic anemia, a search after antibodies or complement or both directed against erythrocytes is required, i.e., one or more of the following three hallmarks has to be present to reach a definitive diagnosis of IMHA:

1. Marked spherocytosis.

2. True autoagglutination.

3. Positive direct Coombs’ test."
